My love for Meursault goes so far
as to tell my husband
I want to be buried there!
I'm sure the winery owners would agree.
This J.M. Boillot Chardonnay hails from Meursault, a smaller sub-region in Burgundy, France. It produces some of the world's finest white wines.
The name Meursault loosely translates to
"Sea Sun" or "Sunseeker,"
but I truly believe the SOIL
to be the determining factor of greatness.
The water table below the ground
is so far beneath,
the vines have to really stretch and strain to receive nutrients.
I believe this struggle creates the
tension and minerality necessary to
truly highlight the Chardonnay grape.
It's lean, limestone, and lovely.
Think bright stone fruits, slight nuttiness, and clean acidity. Perfect.

80% Pinot Meunier
20% Pinot Noir​
The MOUSSÉ family has lived in
the Marne River Valley since 1650,
and bottled their first Champagne in 1923!
They plant all 3 varietals allowed by law,
but have a serious affection for
Pinot Noir and Pinot Meunier.
This allows for a much more
fruit-forward expression-
Unripen strawberry, and blueberry notes.
Less brioche, more chalky minerality.
