Birk began his career in wine
in hospitality... just like yours truly!
Throughout his studies at Cornell University and later with the International Wine Guild, he knew he wanted to make
wine his full-time obsession.
Next step retail- he built three wine shops from the ground up on the East Coast. During that time, he met the owners of a national wine importing company, Acid Inc. Soon he left retail and began recruiting brands to come aboard
as their brand manager.
Throughout his career, his network of mentors and fruit sources grew allowing him to create ICONIC wines in in 2011.
During his inaugural vintage,
he made 90 cases of
Chardonnay, selling out immediately!
Knowing he was on to something special,
he directed his full attention to
ICONIC wines and never looked back!
Birk describes his wines perfectly by saying he makes wines he wants to drink.
Nothing frilly, pretentious, or over-the-top like Californian wines of the past.
Streamlined and focused is how I describe these two whites.
-The Shapeshifter- A Sonoma Valley Pinot Gris like none you've had before.
By allowing the skins of the pressed grapes to remain in contact with the juice
for many hours, the wine is the most pretty salmon color,
with a nose hinting of root vegetable, think beets and rhubarb.
This is an Orange wine you want to taste!
The palate screams for seafood. Tuna, sushi, salmon,
it's almost like the color of the wine predicts its food pairings.
Unripened strawberry and more unusual flavors
like apricot and melon greet your tastebuds.
It is both refreshing and a brain-teaser wine for this summer.

Perfectly named for the opportunity, Birk was able to procure
some delicious fruit from a neighboring Sonoma winemaker.
Because of COVID-19, said neighbor thought it unlikely
he'd be able to produce this year, and allowed Birk first dibs on his grapes.
What resulted is a cool blend of Chardonnay, Sauvignon Blanc,
and Fruilano (more popular in Italy.)
The blend hits the spot when you simply cannot decide what you're wanting!
It offers all flavor profiles. A hint of grassy herbaciousness thanks to the Sauvignon blanc.
A full baked fruit midpalate of Chardonnay,
and just a kiss of floral femininity from the Fruilano.
