In the wonderful world of wine,
many choices can be made
in the vineyard,
as well as in the cellar.
Natural winemakers, like
France's Anders Frederick Steen
and Sicily's Frank Cornelissen,
are doing the
absolute bare minimum
intervention in the
growth and vinification
of these wines.
This means going
further than organic,
or even biodynamic.
Cornelissen was even quoted
as saying biodynamics was
an "interventionist practice."
No sulpher is added in bottling,
and Steen even hand presses
and uses his own feet for punch downs!
These wines taste as fresh as possible, showing wine's living characteristics.
